Lamb Recipes
from
Sheepy Hollow at Native Oaks Farm

Rachel's Casserole
(with ground mutton)

Taste-Tested by us, here at Sheepy Hollow
and we enjoyed it immensely


1 lb of Sheepy Hollow ground mutton
olive oil
1/2 cup shredded or finely chopped carrots
16 oz can of diced tomatoes
1/2 lb of pasta of choice (I use penne)
small onion (optional)
Rosemary (to taste)
Oregeno (to taste)
Basil (to taste)
Dill (to taste)

Heat olive oil in a frying pan.
Add mutton and carrots and brown mutton 'til slightly done.
Add can of tomatoes and season to taste.
Boil pasta while sauce is simmering.
Throw together in a casserole dish.

Serves 4 to 6.
